Best type of red wine to serve with beef tenderloin/standing rib roast/etc?
Keep in mind when you are dealing with beef and there is a significant amount of lipid content, you should really consider tannins content in a wine as it lends itself well to beef and fat. Tannin’s are found through the oak influence and red grape skins in particular. Progressively starting from Merlot to Cabernet Sauvignon and then to Zinfandel works. Any red wines from the Rhone area of France. And certainly domestic Syrah.
Wine suggestions:
- Syrah Havens, Paso Robles, $18. Meaty character, mocha-coffee hints & peppery spring to its finish on the palate.
- Cabernet Sauvignon Sterling, Napa, $19. Dark ruby color, spice, and hints of chocolate.
What kind of wine would you suggest with duck?
I would really consider a rustic, old world white style of wine with great duck. Pinot Noir would work as a red. Fuller style Rieslings from Alsace, Sancerre from Jolivet $16 or even a Gewurztraminer would work extremely well.
