Chef Crouzet is a master of the art of cooking, and this is how he describes his process: "In the kitchen, I can be intuitive when at the stage of creating a recipe or dish, tasting it and sharing it with my colleagues. However, when we enter the stage of production, I become very rigorous, to the obsession, to achieve high standards of quality. Choice of produce and their preparations remain imperative because, when we choose a specific product from a perfectionist producer, we must make sure to keep all its flavor, treat it with respect and prepare it in a way that the best will come out of it without losing its particularity." Chef Crouzet meets with local cheese producers from Saint-Raymond-de-Portneuf, small vegetable producers from Charlevoix or lamb breeders from Kamouraska to talk about their dedication to quality over quantity. He says it makes him "discover the specter of local flavors," in ingredients that can be found right here in the Quebec region. His passion for the freshest seasonal ingredients and healthy preparation comes through in every dish he creates. "Those products are fresher and tastier since they have not been altered by long-distance transportation," he says. "It is crucial to keep harmony between portions and cooking methods in order to offer our clients dishes that meet today's nutrition needs which have evolved and must be adapted to changes in lifestyle."

L'Astral is not just for grown-ups. The restaurant features "A Menu For Our Little Friends", with kid-friendly favorites like spaghetti, chicken nuggets, chicken breast or beef with vegetables and French fries. The menu, for kids 12 and under, also includes dessert and a beverage, and kids under 6 eat for free.
