Colorado lamb, filet mignon, meat Bolognese udon and seared duck are all designed to delight the palate, and all change with the seasons. Whet your appetite with Chef Fuji's trademark tuna cocktail, served over dry ice with Midori liqueur and a fresh onion roulade. Then, indulge in Marssa's samplers, like the Bento Box or a special sushi and sashimi platter, created by Chef Fuji. The more adventurous will want to try the "omakase", which means, simply, trust the chef. Master Chef Fuji creates his signature, five course meal combining the most delicious ingredients and his impeccable culinary skills. And be sure to leave room for dessert, each one inspired by the flavors of the season.
Culinary Philosophy
For Chef Fuji, cuisine is not just a calling, its in his blood.He is a third generation sushi chef, whose father was the Grand Master Chef for the Japanese Chef Association, and coordinated special events for the Emperor of Japan. Chef Fuji began his career as an apprentice to one of only three master chefs in Tokyo. Discipline, diligence and tradition define his culinary style, using techniques like Kaiseki and Sushi while developing new and innovative methods and ideas.This is sushi as art, designed to communicate Japanese values through traditional culinary skills.
