Loews Ventana Canyon chefs to teach desert-inspired dishes to home cooks
Resort’s Summer Desert Culinary Series shows guests and locals how to cook with native ingredients
TUCSON, Ariz. (May 13, 2013) – Chefs at Loews Ventana Canyon are offering guests and locals alike an education in cooking with ingredients found in many Tucson residents’ backyards with the kickoff of the Summer Desert Culinary Series on May 24.
The culinary series, which features once-per-month cooking classes May through August, gives attendees the opportunity to harvest native ingredients from the resort property and get a hands-on lesson in how to use them in their own home cooking from some of the region’s best chefs.
The first class, slated for May 24 at 2 p.m., will feature the saguaro cactus fruit. A guest speaker from Tohono O’odham Community Action will give a tutorial on the saguaro and its fruit, and then Executive Chef Ken Harvey will teach attendees how to create make-at-home dishes using saguaro syrup and saguaro seeds. Upcoming classes include:
June 21 at 2 p.m.
Barrel cactus fruit
Attendees will learn to make specialty desserts using barrel cactus with Pastry Chef Krista Owens.
July 5 at 2 p.m.
Attendees will harvest mesquite and learn how to whip up creative mesquite appetizers with Executive Chef Ken Harvey.
August 30 at 2 p.m.
Prickly pear fruit
Attendees will harvest prickly pear with the resort culinary team and get a lesson in prickly pear cocktails with on-site mixologists and BBQ specialties with Executive Chef Ken Harvey.
