The newly renovated Loews Regency offers several new food and beverage options, including the flagship restaurant, The Regency Bar & Grill.
Dan Silverman is the Executive Chef, overseeing all aspects of culinary development, including creating menus and concepts under the Sant Ambroeus umbrella—for the restaurant, bar and in-room dining.
The Regency Bar & Grill offers new American cuisine emphasizing locally sourced ingredients, bright flavors and thoughtfully prepared seasonal vegetables coupled with high quality meat and fish.
Over 20-plus years as a chef in New York, Dan Silverman has cultivated a cooking style that is elegant yet informal; healthy yet indulgent. Silverman was most recently Executive Chef at The Standard, High Line in New York City and their signature restaurant The Standard Grill, where his loyal customers and a host of food critics rave about his creativity and culinary genius. Prior to The Standard, High Line he was Executive Chef at famed Lever House Restaurant. Under his leadership the restaurant was nominated as “Best New Restaurant” in 2004 by the James Beard Foundation and also was awarded a “Michelin Star” in 2006 & 2007.
