Yep, it’s a new Minneapolis thing, and its handcrafted “meat-free meats” and “cheese-free cheeses” have landed at Apothecary Bar & Lounge and Cosmos, and is available through room service and for banquets. The Herbivorous Butcher is the brainchild of a brother-sister duo, and started as a farmer’s market stand before becoming a bona fide brick-and-mortar. Specialties rotate between breakfast sausage, ribeye steak and more.
