Chef Josh Capon of Lure Fishbar's Bash Burger | Loews Miami Beach Hotel
Miami Beach

There are few dishes as American as a burger, but if you’re looking to shake up your eats with a new spin on the classic, look no further. Lure Fishbar’s Chef Josh Capon served up his signature award-winning burger at the Amstel Light Burger Bash during last week’s 13th annual South Beach Wine & Food Festival in Miami.

The event, which also featured the country’s best burger bites from renowned celebrity chefs like Michael Symon, Marc Murphy and Rachael Ray, was a sold-out success. Luckily, Chef Capon was generous enough to share the recipe for his “Bash Burger” (a four-time winner of the New York City Wine & Food Festival Burger Bash) with us.

Read on for details of how to whip up his mouthwatering creation, complete with bacon jam, caramelized onion and American cheese, at home. Or, better yet, stop by Lure Fishbar at Loews Miami Beach Hotel and enjoy the burger at South Beach’s hottest new restaurant.

In a large skillet, cook bacon over medium heat until crispy and golden. Drain bacon on paper towels, Reserve 3 tbsp. fat. In the same skillet, heat bacon fat and canola oil. Add onions and cook covered, over low heat for 10 minutes. Uncover pan and continue to cook, stirring occasionally, until onions are very soft, 10–15 more minutes. Stir in bacon, white wine vinegar, thyme, and salt and pepper to taste.

Blend mayonnaise, ketchup, garlic, sherry vinegar and Sriracha in food processor. Add salt and pepper to taste.

Place burger patties on grill and top with mustard. Grill to desired temperature and top with cheese. Dress each bun with 1 tbsp. sauce. Add burgers and top with bacon jam and pickles.
