Poydras & Peters Redefining American Fare

Something  exciting has happened in New Orleans and it's right inside our doors. Poydras & Peters, an American Brasserie, is now open at Loews New Orleans Hotel. At the helm is native New Orleanian and culinary great, Executive Chef Tommy Hines.

Chef Tommy began his career working for the Brennan Family of restaurants and went on to work for prestigious locations including the Tribeca Grand Hotel in New York City, Mesa Grill Bahamas, Viceroy Snowmass and, most recently, Noyane at the Conrad Chicago.

“The resurgence of the culinary scene in New Orleans over the past 13 years has not only shown the resilience of the city, but the importance of how food brings people together across different communities and cultures,” said Chef Tommy, “With Poydras & Peters, I’ve pushed creative boundaries by reimagining classic American dishes with the influence of several cultures, and use fresh, locally sourced ingredients to ensure every course tells a great story.”

This past week, we followed Chef Tommy to the Crescent City Farmer's Market as he carefully chose these fresh ingredients to bolster his menu and continued to cultivate strong relationships with each local vendor.

Poydras & Peters has a diverse menu featuring American fare with Italian and Vietnamese influences that is both approachable and affordable. The dishes invoke curiosity and fun by tying back to the rich history of Poydras Market, with a nod to the food prevalent in New Orleans today. The Poydras Market (1832–1938) occupied the land in the center of Poydras Street between South Rampart and Baronne Street, featuring local seafood and produce brought to the area by the New Basin Canal. Poydras & Peters takes inspiration from the Market's melting pot of cultures and brings beautifully diverse flavors to each dish on the menu.

Chef Tommy is on the forefront of redefining what American fare means by taking inspiration from the culturally diverse cuisine that makes up the Crescent City and bringing unexpected flavors that weave historical significance into the fabric of his food. We invite you to come sit at our table and experience these unique flavors you won't find anywhere else.
