Fairmount Bagels creates them in the old tradition of rolling dough by hand, boiling it in honey water, and baking it in a wood-fired oven. This family business that dates back to 1919, when Russian immigrant Isadore Shlafman opened shop in the Mile End community. Today, the biz still thrives and became especially notable when astronaut Gregory Chamitoff brought Fairmount bagels with him aboard the International Space Station. They are featured here at Hôtel Vogue on the catering menu.
